About once a week I gather up an armful of easy stock ingredients in the house and make this delicious dip. I call it my Mexican meal dip.
ingredients:
1 bag of boil in bag rice
1 can of black beans
1 can of refried beans
Taco cheese (it’s queso, but with spices)
Salsa
Salsa verde
Shredded Mexican blend cheese
Optional: boca ground ‘meat’, ground beef, bacon…etc
Start by cooking your rice and heating both cans of beans. I find it helpful to heat the black beans with a dollop of salsa verde.
Grab a bowl and fill it in layers; rice, beans, beans, queso, salsa, salsa verde. Mix. Add the shredded cheese and microwave for 1 minute.
Serving suggestions: I eat this in SO many ways. By itself as a snack, with tortilla chips, even with potato chips. My ultimate favorite, though is in a tostado bowl with some lettuce thrown in. Taco salad anyone?
