Recipe :: Ramen

Guys; it’s so cold. Like really effing cold. If you’re anything like me you’re a big baby; your extremities change colors, no amount of layers seem pervious to the frigid air and wind, and no amount of coffee or tea seems like enough. Days like these have me craving a slurp-y dinner that’s easy yet substantial and will put me into a food coma effective enough to bring me into the next day of arctic living. Things I’ve been noshing on lately? Soup and grilled cheese, classic pasta, and ramen. Ramen you say!? Yes, but fear not; this is not your college ramen (well, it is, but upgraded).

Ingredients:
3 packets of Ramen (1 per person/serving)
1/2 an onion
2 cloves of garlic
meat of your choosing (we chose tofu)
1 table spoon of miso
8-12  cups of broth (we use vegetable)
2 TBSP of soy sauce
2 TBSP of sesame oil
1 branch of ginger
a bunch of cilantro, leaves broken up
a handful of scallions, chopped
1 egg per person
Siriacha sauce to taste

Begin by bringing your vegetable broth and miso to a boil in a large pot. Once they have come to a rolling boil, add in your full branch of ginger, the soy sauce, sesame oil, and let that simmer for a bit. We tend to do an hour+; the more it simmers the better it tastes!

Once you have your broth to your tasting it’s time to add your noodles (throw out the included sauce pack) and let simmer until noodles are soft and separated. While that boils slice your onion, dice your garlic, and chop your meat and sautee in a frying pan. Add to your noodles and let simmer for another 5 minutes. Next, fry (or poach) an egg per person.

Dish out the noodles and broth, placing the egg on top. Garnish with cilantro, scallions, and sriracha.

Recipe Monday: Mac n Cheese Spring Rolls

If you’ve been following me a while you may have noticed I have an obsession with one NY eatery in particular; more specifically one dish. The Mac N Cheese spring rolls at Cafeteria (17th and 7th if you’d like to go).

I’d been wanting to learn how to make spring rolls for quite a while, and I finally tried my hand at some of my own mac n cheese filled rolls.

Start with a pack of Mac n Cheese, some spring roll wraps from your local grocery store, and some oil.

Make the macaroni as you would normally. My cat maven was eager to help and get things started while the pasta cooked, as you can see.

When the macaroni is finished and cheesed, bring the spring roll squares, one at a time, filling with two tablespoons of macaroni and then folding similar to a burrito; or according to these guidelines:

Place them, one at a time, in a frying pan with plenty of oil. Use tongs to evenly cook/fry each side of the roll.

Let cool, and voila!

Now, trust me, they are NOWHERE near as good as Cafeteria’s. My dad suspects they use Gruyere cheese in the macaroni, and I was also lacking the smoked gouda dipping sauce. In any event, my family loved them, my brother ate about 5, so they can’t be all bad!

Next time, though, I’m trying different cheeses! I WILL perfect them!

Girl Crush: Leopard Z.

No, I do not speak or read any form of Chinese or any other Asian Dialect. I do however, have a lust for my newfound style crush, Leopard Z. With her coy and soft features she is stunning. Slap on some leather and studs and I’ve got myself a lady boner. She makes overalls look good, and Ozzy Osborne sunglasses. And, I just needed to share.
