Recipe Monday: Corona Cupcakes

Right after I found this recipe on Pinterest I knew it was one I’d have to try! And did I! This delectable dessert caters to all my booze loving friends and Ofcourse, myself. The recipe is decently easy and the frosting is seriously heaven; it completely makes the dessert!

Cupcake Ingredients:
3/4 cups butter or margarine
1 3/4 cup sugar
2 1/2 cup flour
2 tsp baking powder (not to be confused with baking soda)
1/2 tsp salt
3 eggs
1 tsp vanilla
1/2 tsp lime zest/juice
6 pack of Corona beer
1/4 cup milk

Now, I began by indulging in all things Mexican, just to get in the mood. Enchiladas for dinner, cracked open one of the beers, and began prepping (read: Pre-heat oven to 375 degrees and lining my cupcake tin with cupcake liners).

Take your flour, baking powder, and salt and whisk together in a medium sized mixing bowl.
In a large mixing bowl, stir your butter and sugar together until smooth, even “fluffy”. Then add the eggs, vanilla, and lime to this concoction.
In a small mixing bowl combine your milk and beer (and be sure to keep stirring so they don’t separate).

Now comes the fun part. Slowly, alternatingly, add your flour mixture and the beer mixture into the butter/egg mixture. Once this is all together and a smooth cupcake-y texture you can start pouring it into your cupcake pan, filling each cup 3/4 of the way. Place cupcakes in the oven and bake for 18 minutes, and your ready to start making your frosting!

Frosting Ingredients:
8oz cream cheese
3 cup of confectioner’s sugar
4 tbsp butter or margarine
2 tbsp lime juice/zest

Combine all ingredients in a small mixing bowl until a thick, frothy frosting. Make sure to taste test, as this, in my opinion, is the best part of the cupcake.

Okay, time to take out your cupcakes! Take a fork and, while still warm, poke holes in the top of the cupcake and use a pastry brush or spatula to glaze on some more Corona. It really helps soak the flavor into the cupcake. Let them cool fully before frosting!

Voila! Feel free to garnish with lime slices or beer tabs as you like! And don’t forget to fully enjoy (responsibly) and share these delicious desserts with your friends!

Heat Wave

Back in the city that is my church, at long last. All is going well, save for a minor mishap of falling on my head. Also, let’s state the obvious, IT’S SO HOT. Girl Crush: Willow Smith

Can I even call this a “crush” without it being misconstrued for some sort of child objectification? Please, anyone reading, don’t be alarmed; I merely just mean I’m crushing on this child’s style.

I’ve spent the evening listening to Willow Smith and perusing her Tumblr and InstaGram and I just have to say; she is the coolest F-ing 11 year old I’ve ever seen! and how can she not be, with such exceptionally cool parents? I almost feel bad for being sartorially inspired by a child of that age, but you know what? I don’t care. And whether it’s her own personality or a stylist, I don’t care; this is STYLE and one that I love.

And even cooler? After her smash hit “Whip my hair back and forth” came and went, Willow cut her hair, and her loving and endearing parents supported her whole heartedly. Cool parents=cool kids.

Willow’s style staples seem to be very similar to my own; combat style boots, oversized tee shirts, a never ending supply of denim cut offs, and ofcourse, some studs and spikes. Also, I’m incredibly envious of her blazer/jacket collection. And her hats. I’m clearly pretty upset over losing three fedoras in the past year.

Green tea Frappucino? Me too, girl, ME TOO.

Recipe Monday: Breakfast Egg Rolls

 

This is a combination of two of my favorite foods! Breakfast (or, meal rather) and egg rolls! I got the idea after the mac n cheese spring rolls that maybe I can put ANYTHING into these little rolls and fry them an have them be delicious! so far, so good!

Ingredients I used:

3 eggs

Small block of tofu

Salad mix (the one with shredded carrots works best!)

Canola oil

Salsa

Egg roll wraps

Begin my scrambling your eggs and frying your tofu (or meat, if you’re into that).

 

Once those are finished cooking let them cool and begin to prepare your rolls. Put about a tablespoon of eggs, a tablespoon of salsa, a small strip of tofu (or meat) and a bit of salad mix, then roll like a burrito! or, like, the image below.

Once you have a gratuitous amount rolled, you can begin frying them in a thin layer of canola oil. Be sure to pay attention and have them fry evenly.

Voila! A unique breakfast set to please almost anyone!

Homesickness

It’s been a long two and a half months away from my New York City; a long tumultuous few months. But pending review from my primary doctor tomorrow, I should be back staring at the skyline from the Brooklyn coast the beginning of August! For now, a few visits and this tee shirt shall suffice.

Where I’m Hiding: InstaGram

I’ve recently been retracting myself; deactivating my Facebook and personal Twitter, as well as spending less time on Tumblr.
At first, it was because I was working on so many DIY projects, but then it became something more and immensely liberating. I haven’t officially deleted anything yet, though, because I know from a marketing.networking standpoint I need to maintain as many connections as I can; but for the time being I’m happy to be socially ‘free’.

Anyway, I still have my EffortlessCool Twitter and InstaGram, so here’s a few snippets of what I’ve been showcasing there (also because I’ve had no one to help me take outfit photos in weeks).
