It’s been a busy end to summer…while I’ve had more free time from work I’ve surprisingly felt less like taking outfit photos for the blog and more like embracing experiences with friends. Happy hours after work and my favorite volunteer projects have held a higher importance to me. #SorryNotSorry. I’m planning trips, a few [minor] blog changes, and plans with friends, bloggers and not. I’m finding new loves in life, but am still in love with blogging.

So, dear followers and readers, accept this bold and fun 9 to 5 style post as a peace offering for my minimal posting as of late, as a “thank you for your patience” with me.

Polka dots are such a fun print to style these days, and nothing brightens up a crisp fall day like orange hues!

Mom’s Birthday & What I Wore

This year I did all I could to make my mother’s birthday the best it could be! I woke up earlier than her to make funfetti pancakes and blueberry coffee (in their coffee maker; which for me is a challenge as I’m a Keurig girl!). She loved her breakfast and relaxed all morning while i fixed up her bathroom with her tangible gift; a sand and seashell square-‘quarium’ alongside Seagrass and Seashore scented candles.

I took her out to lunch to an esteemed nearby eatery we’d never been to, Not Your Average Joe’s. We enjoyed a fresh pitcher of sangria, while she dined on vegetarian lasagne and I had a veggie burger with fries. It was an exceptional suburban dining experience and my mom seemed to thoroughly enjoy herself, to my pleasure.

She went to work, then a work meeting, then home to a homecooked seafood meal by my father and a chocolate tiered cake.

Recipe Monday: Pumpkin Pie

Pumpkin is my favorite part of fall; pumpkin muffins (which I made the first week of October), pupmkin bread, and ofcourse, pumpkin pie.

For Thanksgiving I took it upon myself, as the soon to be cooking connoisseur, I helped my father with as much as I could. We made a pumpkin pie from scratch, minus the crust.

Here are the ingredients you will need:

1 can of pumpkin puree

1 cup of sugar

2 eggs

1 cup of melted butter (or whipped butter, or margarine)

1tsp of molasses (we substituted cord syrup for it)

1/4 tsp of nutmeg

1/4 tsp of ground ginger

1 can of evaporated milk

1 pre made pie crust (maybe someday I’ll learn to make it on my own!)

Start by preheating your oven to 425 degrees. Put the dry ingredients into a large bowl, dryly mixing the sugar, nutmeg, ground ginger, and a dash of cinnamon if you so please. Beat the eggs in a separate bowl.

Then mix all the ingredients, including the remaining molasses and evaporated milk, together in the one large bowl. Whisk until smooth.

Pour into the pre made pie crust/s, then bake at 425 for 15 minutes. Then, turn your oven down to 350 degrees, and continue to bake for another 40 or so minutes.

YUM!!
