Recipe Monday: Calzone

Made this DELICIOUS meal last night with some friends I’d spent the weekend with. It was possibly the best thing I’d eaten all week.

ingredients:
Pizza dough (recipe here)
1 egg white
Uncooked spinach
Ricotta cheese
Mozzarella cheese
Tomato purée
1 jalapeño
Minced garlic
MorningStar “bacon” strips (feel free to use real bacon if you’re not veggie)

Start with the sauce; chop and mince the jalapeño pepper, then add it, along with a tablespoon of minced garlic and the tomato purée, to a sauce pan and heat stirring the entire way through. Feel free to add other spices such as onion powder, garlic powder, pepper and salt, to taste.
Next, preheat your oven to 375 degrees and begin to spread your pizza dough. Then put the sauce over about half of it, leaving about 1/2 inch perimeter. Add your ingredients to only that half, then add more sauce to the whole bit of the dough, save for the edges.

Fold the dough only half over, making sure to squish the edges together so they cannot desperate during the baking.
Take your egg white and glaze the top of your calzone, and cut 3-5 1inch slits for ventilation.

Bake for 20-30 minutes, until golden on top. Take out and let cool, then dig in!

Recipe Monday: Kraft Pizza

So I really wanted to make macaroons. Been doing research for awhile, gathering ingredients (it’s quite hard to find almond flour at a suburban grocery store…they look at you like you’re speaking another language!).

So this Monday I finally garnered the courage to attempt these decadent cookies…but it turns out my cooking skills aren’t up to par to make a meringue just yet.

So I gave up and was craving pizza. With the Help of my dad we got a pizza dough and lightly baked it at 350 degrees while making creamy velveeta mac n cheese, using soymilk and velveeta chunks.

We scooped the mac n cheese onto the dough, along with bacon bits on half for the carnivores, and baked it for another 10-15 minutes at 350 degrees until the macaroni was golden brown on top.

Holy deliciousness, this pizza was DEVOURED by our family in 15 minutes. SO GOOD and for way cheaper than pizzerias!

Recipe Monday: Pizza with Home Made Dough!

I know, I’ve done a pizza recipe already. Kind of. This time, though, I’ve got a recipe to make the dough! and a different (all vegan) pizza!

Okay, so For the dough you will need the following ingredients:

4 1/2 cups  all-purpose flour
1 3/4 teaspoons salt
1 teaspoon  instant yeast
1/4 cup  olive oil
1 3/4 cups water, boiling

Mix these ingredients in a large mixing bowl until dough is, well, dough-ey. Now, preheat your oven to 350 degrees while you chop vegetables.

Spread your dough across your pan (I know ours isn’t round, we should get on that…) with the help of a bit of flour to keep it from sticking  then spread tomato sauce or pizza sauce (even marinara/pasta sauce works) across your dough.

Then, add your cheese and toppings!

My roommates and I made two pizzas; one my favorite spinach and ricotta and another with onion, tomatos, yellow peppers, spinach, and vegan cheese.

Then, place the pizza/s in the oven and cook! Until the crusts are golden brown. Once they’ve reached that shade of perfection take them out, let cool for 5 minutes or so, then cut and dig in!

YUM! Also, the vegan cheese melted sooo well, it was a perfect gooey cheese! Enjoy!
